Raising and feeding livestock is a fundamental driver of global sustainability challenges. The introduction of innovative and attractive hybrid protein rich foods intends to reduce the consumption of animal-based products. The scope of Corina’s thesis is to develop targeted processing approaches for alternative protein concentrates from plant and single cell sources to further the transition towards more sustainable food systems.
Corina received her BSc and MSc in Food Science from ETH Zürich with an exchange semester at the University of Melbourne. The focus of her studies was food processing. She conducted her master’s thesis on whey protein agglomeration at the Nestlé Product Technology Centre in Konolfingen. She then supported the start-up yamo in the product development of their high-pressure-preserved baby purees and later joined Bühler for a three-year-traineeship where she gained insights into the nut industry, feed production as well as the production and processing of alternative proteins. Corina joined the Laboratory of Sustainable Food Processing in Summer 2021 to delve deeper into the research field of plant and single cell protein processing.
